Blondies

Taken from Fat Witch Brownies by Patricia Helding

8 tbsp (1stick) of unsalted butter
2 large eggs
1 and 1/4 cups packed light brown sugar
1 tbsp molasses
2 tsp vanilla extract
1 and 1/4 cups unbleached flour or plain flour (UK)
1/2 tsp salt
1/4 tsp baking soda or baking powder (UK)
2/3 cup semisweet chocolate chips
1/2 cup chopped pecans (optional)

~Grease 9x9 pan
~Preheat oven 350*F (180*C)
~Cream butter and eggs, beat in sugar, molasses, and vanilla
~Sift flour, salt, and baking soda into butter mixture until no dry ingredient remains
~Stir in chocolate chips and pecans (if using) by hand
~Bake for 25 minutes in pre-prepared pan or until toothpick comes out clean
~Cool for 1 hour

Okay, so these were a big FAIL for me. Not because of the recipe, I'll explain. My oven tends to be a bit on the warmer side so I tend to check my baking before the allotted time. So, for this I put it in for 20 minutes and then gave it another minute or two before pulling it out. Toothpick, looked clean to me. But it must not have been as the middle was gooey. It was too late to stick it back in as I followed the 1 hour cooling rule.
Here is where I fault cookbooks with too many pictures, my blondies were starting to get toasted at the ends and the top was very brown. Which is probably fine , but it didn't look like the picture! If you hadn't noticed I didn't take any pictures of this. I was very annoyed and threw it away before I thought I should have taken a picture. Sorry!
Anyway the ends were good....
Now what to try next!

    I'd love to see some fall recipes. Especially something that uses apple or pumpkin!

  2. I've never made anything with pumpkin.... Think this thanksgiving I might give it a go!

  3. I tried to make blondes with White chocolate and it didn't work out as well as I had hoped. Bought a White chocolate chunk brownie mix the other day at sainsburys that looks blondies (dr.Oetker brand). Hopefully those will turn out ok!!!
