Pumpkin Spice Cupcakes and/or Dessert Bowls {recipe}


This is the first Thanksgiving, I think since I moved to the UK, that I haven't made pumpkin pie. It felt a little odd, but there were no complaints with the alternative.

This recipe suits cupcakes if you don't happen to have a 6 cavity dessert shell that makes cake bowls! After a quick look around the 'ol internet they don't seem to exist any more if you come across one pop a comment below and let us all know!


The special tin isn't necessary though because the recipe makes great cupcakes and when topped with the cream cheese frosting and toasted walnuts and drizzled with salted caramel it's perfection all in one little cake.

Cupcakes aren't generally something that is thought of as a dessert, but as a birthday treat or a snack with coffee. However, I would argue that cupcakes make a great dessert, who can say no to an individual cake?

I mean they can... but I don't understand those people.


No matter if these are baked as cupcakes or dessert bowls or, if you adjust times slightly, as a tray bake the cake itself is a good cake. It's a nice texture and the spices are popularly paired with pumpkin because they work well together.

So, if you are looking for an autumn or winter treat that fills your kitchen with the best smells give this one a go!


Pumpkin Spice Cupcakes or dessert bowls

4 large eggs
400g sugar
200ml vegetable/sunflower oil
1 can (425g) of pureed pumpkin
325g plain flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp bicarb of soda
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cloves

Heat the oven to 170C and line your cupcake tin or grease your 6-cavity dessert shell tin with butter or shortening.

Beat the eggs, sugar, oil, and pumpkin together. Then beat in the flour, baking powder, cinnamon, bicarb, salt, ginger, and cloves until just combined. Using a medium ice cream scoop fill your cupcake cases or your 6-cavity dessert shell tins. I made a dozen cupcakes and 6 dessert bowls; you could probably get a dozen and a half cupcakes or about a dozen bowls. If you are making bowls you don't need the frosting below, just fill with ice cream or whipped cream and sauce and nuts and whatever you want to top it with!

Cream Cheese Frosting
100g cream cheese
70g butter
1 tsp vanilla
300g icing sugar
walnut halves, toasted (optional)
salted caramel drizzle (optional)
ice cream (optional, but highly recommended)

Beat the cream cheese, butter, and vanilla together. Slowly beat in the icing sugar until combined and smooth. Place about a tablespoon or so of frosting on top and smooth out with a spatula.

Finish off the cupcakes by sprinkling or placing the walnuts on top and drizzling over about 2 tablespoons of salted caramel by placing it in either an icing bag or sandwich and just snip the tip. If you made dessert bowls, then ice cream is always a great filler, whipped cream and toasted walnuts would make a suitable alternative in my opinion!




Pumpkin spice is one of my favorite spice combinations and even though you can use it any time of year, it just feels right in the autumn months leading to winter. English winters are wet, cold, and grey a far thing from my snowy, cold, and grey winters back home, but I still like this time of year. I love sweaters and hats with bobbles and my scarf collection is endless I could literally wear a different one every day of winter... well maybe not every day!

BraveTart: Iconic American Desserts by Stella Parks {book review}


Into every generation a slayer is born. A slayer of what vampires? Possibly. However, in this generation a slayer of cake, cookies, brownies, etc..... has been born. She goes by the name of Stella Parks, better known as Bravetart.


I have followed her work on her site by the same name, Bravetart, since I started blogging. I discovered her blog/site when looking for a cookie recipe that made soft cookies and she of course had one, it's still on her blog and you can find it here.


Even back then there were whisperings of a book and now it exists in all it's wonderful glory. The full title of the book is: BraveTart: Iconic American Desserts. Not only do we get gorgeous food photography and recipes we get a history of each one!


I shared this book a while back on my instagram stories because it was a year old (yes I know how behind the times I am) and in those stories I mentioned that the reason I love this book so much is because living abroad there are so many nostalgic treats I miss and now I can just make them at home!

And make them better with the help of Stella because everything is better homemade and she makes everything better!


If I listed everything I wanted to try from this book I would have to list every recipe as if I had the time and money I would do just that. However, I don't have the time or the money .... well not in a short space of time. Anyhow, I will share the top five recipes I plan to try over the next few years..ahem months whatever!

Easy Waffles from Jamie Oliver


I wish I could say that I just magically knew how to make waffles from scratch, but I don't. Like most people I had to look it up. I mean someone somewhere in time must have said lets mix flour, egg, and milk together and heat it up in a pan or griddle or waffle maker or whatever they used way back in the day and magically made waffles.

However, when it comes down to the simple things, like waffles, they have generally been done before. That's why I have borrowed Jamie Oliver's recipe - which probably wasn't his recipe to begin with either to be fair. But in today's world of copyright and people owning things I will give him credit here as it was his website I found the recipe I use to make waffles.


Since picking up a waffle maker for only £5 (marked down) I have been making waffles for my girls and I for breakfast and dessert. I hadn't thought of sharing it on the blog because I hadn't changed the recipe up at all and toppings are subjective to individual taste.

Then I thought well people are missing out on this super easy waffle recipe to then top with whatever they want! I mean they might find it on Jamie Oliver's site like I did, but if they are like me they are skeptical of how it might turn out and as I have made this about a dozen times now I can say yes this is a good waffle recipe.


Easy Waffles

150g self rising flour
1 tsp baking powder
1 tsp sugar
1 large egg
240ml milk
1/2 tsp vanilla extract (optional)

Mix the dry ingredients together. Then beat the egg in a separate bowl before adding it, in about three parts, to the dry ingredients. Then slowly add the milk beating until smooth between each addition until it's perfectly smooth. Then following the instructions on your waffle maker make waffles!
I usually get about 6 -8 waffles out of the batter.

Pavlov's Dog, Reading Berkshire {restaurant review}


It seems like it's all happening this summer. I haven't been invited to check out a new restaurant in ages and then in the last 4 months I have been to 4 new places and 2 including this place that have changed up their menu!


Stepping in Pavlov's Dog was like stepping back into my college days. It has a fresh fun vibe from the minute you walk in the door. The bar is all lit up and there is a pool table and in the 'quieter' area where we sat there was a Nintendo Gameboy with Mario Kart set up!


We ordered our drinks. I just gotta say I'm in love with these new tin can cocktails I love apple and had to start with the Canny Smith Apple. It is Ciroc Apple, Sourz Apple, lime juice all mixed in a Tango Apple can topped with fizzy apple belts. Which were very sour by the way. Alyssia, isn't a big drinker, I think I'm a bad influence as I convinced her to try a cocktail. She went with the Dr. Meister which is Jägermeister and lime mixed in a Dr Pepper can and topped with cola bottles.

While we waited for our drinks we couldn't resist having a race on Mario Kart! Alyssia of course beat me over and over as she is our gamer!


Having always loved a good plate of nachos I couldn't resist trying the Nachos Grande - topped with chilli con carne, sour cream, guacamole, salsa, jalapeños, and nacho cheese sauce all the best things you could ask for on top of nachos!


We also had to try the Chicken Wings which were great on their own, but even better with the variety of dipping sauces buffalo, blue cheese, mango and lime, chilli zing with sesame seeds, peanut butter, and chilli jam with sesame seeds. If you are a fan of chicken wings then you need to visit on a Wednesday.

Wednesday night are wing night from 5pm and you get them for 25p a piece. They also have a contest that if you can eat 50 wings (£12.50) as fast as you can you get your score on a board, a t-shirt that says Lord of the Wings, and a reward card topped up with rewards.


Finding myself at another pub I can't turn down a good burger! I couldn't resist the New York Bagel Burger which of course is a burger served on a bagel, with cheese, bacon, pulled cured boneless beef rib, sliced gherkins and mustard. It was so big it was really hard to eat, but was a great burger!


My partner in crime also choose a burger the All New Dirty Burger which is topped with cheese, bacon, southern-fried chicken fillet, pulled pork, BBQ sauce and gherkins; which Alyssia asked for on the side so I could have them!

We always seem to choose burgers, but there are other things to eat like ribs, chicken, fish & chips, and mac & cheese. You can even get a burger topped with macaroni and cheese... back to the burgers. They also serve breakfast and have great lunch deals!!


We had another cocktail and played another game of Mario Kart while we decided on desserts! I stuck with the tin can cocktails and went for the Pina Can-lada which is Malibu, Havana Club 3-year-old rum, and mixed in a can of Lilt topped with pineapple cubes. Alyssia stuck with a classic Sex on the Beach all these cocktails did not help us with our game. Although it didn't help that we decided to play the rainbow road!


I was stuffed and hadn't planned on eating a dessert, but Alyssia insisted on a pancake stack from the breakfast menu - pancakes stacked with Nutella, chocolate, and maple syrup. Knowing that their warm mini churros are something to try we gave them a go. They are filled with a caramel-cream and come with a chocolate dipping sauce.


Tuesday nights are churro nights and just like the wings are only 25p a churro. Unlike the wings there isn't a competition with the churros, I think that would probably be more of a disaster if people were trying to eat 50 churros as fast as they could. I wouldn't want to see that, however I may have to stop in on a Tuesday night as that's a great deal! Plus they have a Nintendo Game Cube.


Overall Alyssia and I had a great night! We have been to so many places, like I said, over the last few months and this was by far one of the more fun and tasty nights! Be sure to check them out sometime and have a look at their website for all their going ons!

Walkabout - Reading, Berkshire {restaurant review}


Walkabout is an Australian bar and restaurant and taking a step inside makes you wish it was off the side of a beach somewhere in Australia! It was recently refurbished and looks great inside and out! I think that it is a great place to go to watch sports, a place to go to after work and hang out with friends, and looks like it would make an awesome party venue!


Not only has it been refurbished, but it has recently updated it's menu! So, when my friend, Alyssia, asked me if I would like to visit with her I couldn't say no! The menu could be best described as bar food and that isn't a bad thing, contrary to how other people feel or think about bar food it's great and I happen to love burgers, nachos, wings, chips and more!


We skipped appetisers this time, although I had a hard time passing up the nachos, they call them Billy Can Nachos Stack and they top them with not only cheese, but macaroni and cheese, salsa, sour cream, guacamole, sweetcorn, jalapeños, chilli, and spring onions! That will definitely be a must-have to for my next visit.


What I did decide on is The Roo - which is a kangaroo burger it tasted more gamey then a beef burger and I was told that it would taste like that and I couldn't find a different word to describe it so I used it here! It is definitely something I had never tried before and if you haven't and you are an adventurous foodie give it a try! The sweet potato fries were crispy and a perfect side!


Alyssia tried the Parmi Burger which was huge!! And she enjoyed throughly! With our burgers we tried a few cocktails I couldn't resist The Jaffa Can which is Sanpellegrino Aranciata mixed with Absoult Vodka, Kahlua and Triple Sec, garnished with an orange wedge which looks a little silly, but it's proof you aren't just drinking a can of Sanpellegrino Aranciata!


Before we left we decided to try a dessert Alyssia couldn't resist the Freakshake that is a vanilla and chocolate fudge milkshake, the glass is covered in Nutella and smarties, and it's topped with a slice of chocolate fudge cake, double chocolate chip cookie, candy floss, cream, mini marshmallows and chocolate sauce! It was huge!!


I wasn't as adventurous with dessert as I was with dinner and went for the Lamington Sundae, which is chunks of chocolate brownie dusted in coconut, and topped with chocolate sauce and ice cream! It was one of the best brownies I have ever had! Rich and dense and better because it was coated in coconut! Highly recommended!!

Overall it was a great night out with drinks, cocktails like the Jaffa Can and Sex on Bondi Beach (Smirnoff Red Vodka and Archers Peach Schnapps shaken with strawberries, limes and a dash of cranberry juice) pictured below, great food, and great atmosphere! If you're looking for a quick bite after work or over the weekend I would suggest stopping in!!

Veggie Desserts + Cakes: Carrot Cake and Beyond by Kate Hackworthy {review}


To be honest with you I've not ventured far into the world of baking with vegetables beyond the "normal" things like carrot cake and pumpkin pie. Kate's book has opened my eyes and my mind to the possibilities of the roles vegetables can play in my baking!


Kate Hackworthy is a fellow blogger and baker and after following her blog on social media for the last few years I jumped at the opportunity to review her new book Veggie Desserts + Cakes! Not only does she write for her own blog, but she always writes a column for Vegetarian Living magazine where she writes about healthy recipes for kids.


This book isn't an "how to hide vegetables in your baking to make it healthier" this is a book that showcases vegetables as the star of the show! With recipes for Kale and Apple Cake with Apple Icing and Avocado Chocolate Cupcakes with Cherry Icing and Sweet Potato and Salted Hazelnut Cookies there is no hiding that these recipes are still going to hit the sweet spot!


Those are just a few of the recipes I would love to try out! The chapters cover Cakes, Cupcakes, Cookies, Squares + Traybakes, Pies + Pastries, Frozen Desserts, and more Sweet Treats. All the things you can expect in a great baking book! I should know I have read many baking books over the years!
