Peanut Butter Banana Cookies {recipe review}


It's officially summer, but my children are still in school for another week or so and it's all a go with plays and projects and school visits. Then they will be off and it will be the juggle of work and keeping them entertained. 

Although it sounds as if I am complaining I'm not. I enjoy my time with my children and can't wait to spend time with them! I recently made them these cookies and they have requested them again so I have it on the list to make them over the summer holidays. 

Recipe was adapted from Eric Lanlard's Afternoon Tea book - which weirdly I have never reviewed here on my blog. Eric Lanlard has several books and I own all of them because he is one of my absolute favorites and if you ever come across one of his books you should get it! 

These cookies were amazing. I changed a few things so the recipe below reflects how I made them! 


Peanut butter Banana Cookies 

125g mashed ripe banana (approx 2 small bananas or 1 large banana)
100g crunchy peanut butter
70g butter, melted
50g dark brown sugar
85g golden caster sugar
1 tsp vanilla bean paste
200g self-rising flour
2 tsp baking powder
30g dark chocolate chips 
20g peanut butter chips 
- 50g dark chocolate chips & 50g peanut butter chips

Gently beat the banana, peanut butter, and butter together until combined. Then mix in both sugars and the vanilla bean paste until just combined. Sift in the flour and baking powder and fold into the peanut butter mixture. Then fold in the chocolate and peanut butter chips. Form a dough and cover in clingfilm and chill in the refrigerator for at least an hour or over night. 

Heat the oven to 180C/160C fan/350F/gas mark 4 - Line your baking sheets with baking paper. Using an ice cream scoop out the dough and place on the prepared baking sheets, leave space between the cookies. Bake for 12-15 minutes, I know my oven has a hot spot so about half way though I rotated my baking sheets and swamped one from the top shelf to the bottom shelf. 
(Makes about 9 cookies using the ice cream scoop, you can make them smaller the baking time is roughly the same but check on them at about 10 minutes.)
Leave the cookies to cool, while cooling gently melt the dark chocolate chips and peanut butter chips together, us using your preferred method. Some people put a bowl on to a swimming pan of water, some use a microwave, I just pop them into my heavy bottom pan and melt it on a low heat. Then place the melted chocolate into a piping bag or a sandwich bag snip the tip and drizzle across the cookies. 


Bananas go off so quickly this recipe is a great way to use them up and they taste amazing!! Did you know you can also freeze your ripe bananas? If you are using frozen bananas just let them defrost slightly and drain off any liquid before using them in the recipe.

Top 5 Vegan Recipes and Products {veganuary - five on Friday}

Veganuary may be over, but there are a few recipes and products I have added to my weekly shop or recipes I have added to my repertoire also one place I will visit again for their vegan menu.

Not in any particular order:



1. Falafels & Hummus wraps: I was making this recipe for years before I decided to try being vegan and it is still a go to lunch option. Falafels with hummus and spinach, shredded carrots, and either mint sauce or sweet chilli depending on the falafels.



2. Vegan burger from Honest Burgers - are made with Beyond Burger patties, they are the first restaurant in the UK to have these vegan burgers and let me tell you they are good!! I know it might be a bit weird to go to a burger place to get a vegan burger, but the rosemary salted chips are the best so it's always a win-win!



3. Banana bread recipe from bosh! - I have written a separate post for this so check it out here!

4. Violife original flavour block: vegan cheese - Cheese was my biggest fear,  I was afraid how it would taste and worried about the texture . Cheese how can vegan cheese hold up against regular cheese? But this one did and I am still using it for recipes and sandwiches.



5. tofu with spicy peanut sauce - this recipe I actually made in February but it was so good even my children liked this one and both ate it right up! Best part is that it goes in the slow cooker and can be left to it's own devices as you sort the rest of your life out.

recipe:
675g extra firm tofu
2 tbsp veggie oil
85g smooth peanut butter
3 tbsp low sodium soy sauce
3 tbsp rice vinegar
dash of lime juice
2 tbsp light brown sugar
2 tsp toasted sesame oil
2 garlic cloves, chopped
1 tbsp fresh ginger, choppped
1-2 red chillis, depending how hot you want it
350g baby spinach
chopped fresh coriander
brown rice to serve

Cut the tofu into thin squares or rectangles or whatever shapes you want and pat dry to remove any excess moisture before frying in a pan over a medium-high heat flipping until browned on both sides.
While the tofu is doing its thing mix everything except the spinach and coriander in the slow cooker and when the tofu is ready mix it all together and leave on low from 2-4 hours depending on your slow cooker. 15 minutes before serving add the spinach and cook the rice, if using 10 minute rice, and serve with rice and coriander as a garnish.

*note I only used one chilli as my kids don't like it too spicy, but if you like it spicy use another one!
**note two I chop up the coriander stalks and mix them in with the sauce
There were so many other things I tried and tested in my month of being vegan a few honourable mentions are the Goodfella's Vegan Pizza found in the frozen section and also found in the frozen section Ben and Jerry's vegan ice cream and last but not least the Heck vegan sausages.

Being vegan was definitely an experience and it has taught me a lot and as already stated changed a lot in how I do my food shopping and cook!


Vegan Chocolate Banana Bread from Bosh! {recipe review}

The best part of being vegan was this banana bread. I am just sayin'.


It's not the first time I have baked vegan, but it was always with varying results this loaf turned out great and I ate it for days and now make it whenever I have any old bananas lurking around.

The recipe is really simple and easy to make. It's literally just throw everything into a bowl and mix it together and then throw it in the tin and bake! Finding a recipe as simple as this, but tastes just as great is always a winner and the added bonus as that no animals were harmed in the making of this baked good!

If you are looking for a great baking vegan recipe to test the waters I recommend starting with this one!


Banana Bread

250g plain flour
75g light brown sugar
75g white sugar
1½ tbsp cocoa powder
½ tsp bicarbonate of soda
½ tsp salt
½ tsp ground allspice
110g dairy-free butter
3 ripe bananas
60ml almond milk
2 tbsp maple syrup
1 tsp apple cider vinegar
1 tsp vanilla extract
60g dark chocolate
50g pecans/walnuts

Preheat oven to 170C fan (190C/gas 5) and line a 1kg loaf tin with parchment paper.

Pour all the ingredients except the dark chocolate and pecans into a food processor or free standing mixer and beat them to a thick mixture. Scrape any excess mixture back into the bowl.
Break the dark chocolate and pecans or walnuts into small pieces and tip them into the bowl. Fold until just combined.
Pour the mixture into the lined loaf tin and put it in the oven.
Bake for 60-65 minutes, or until a skewer inserted at the middle of the loaf comes out clean. Take the tin out of the oven and leave the bread to cool to room temperature. Remove the loaf from the tin and cut it into slices to serve.




Banana, Pecan & Chocolate Muffins {Soulful Baker by Julie Jones}


Muffins don't really get enough credit in the baking world. They are versatile and can carry pretty much any flavor combination you throw at it.

I have made many of banana muffins in my days, but I never added pecans and chocolate to them, nor have I ever drizzled them with maple syrup....


There were so many recipes in Soulful Baker that I want to try out, but with the kids back to school and a million other life things taking priority I stuck to a simple yet delicious bake!


Banana, Pecan & Chocolate Muffins

80g unsalted butter
300g self-rising flour
1/2 tsp baking powder
100g golden caster sugar
220ml whole milk
1 medium egg
1 tbsp maple syrup, extra to drizzle
50g dark or milk chocolate, chopped or chips
50g pecans, toasted and chopped
100g mushed bananas

Preheat the oven 180C/200C. Line a muffin tin with 8 muffin liners.
Melt the butter in a pan and leave to cool. Place pecans in the oven to toast them, keep an eye as nuts are easy to burn, if you haven't already. Sieve together the flour and baking powder, then re-sift into the bowl of a free-standing mixer. Add the sugar.
In a separate jug/bowl whisk the milk and egg together, then pour onto the flour and sugar mixture. Mix on a medium speed until just combined. Add the cooled melted butter and maple syrup, chopped chocolate, pecans, and the mashed banana. Give it a quick mix until it's just combined.
Bake for about 30 minutes in the pre-heated oven. Use the skewer test to check if they are done and leave to cool a few minutes before eating and drizzle the maple syrup over the top!


Muffins turned out perfectly and were delicious with just the right amount of dark chocolate and pecans. If this recipe isn't enough to convince you to give Soulful Baker a look go check out my review here!

Oange Major: orange, pineapple, banana, & yogurt smoothie


I made a smoothie! When one visits a juice and/or smoothie place they always have crazy names like Strawberry Dream or BananaRama or something. Generally I am not that creative when it comes to names.

As a kid I named all my stuffed animals what they were. Penguin (my favorite stuffed toy) was called Penguin and his best friend Walrus....yup was a walrus. They are still best friends. I also had a platypus (he was a beanie baby, before beanie babies were a thing) he came with a name, but I changed it to Platypus. Because he was the original color I had a lady offer me $500 for him back in the day and I said no. I was a kid, I didn't have bills to pay.

Anyhow, I was drinking this and googling cocktails and something was called Major something or another and I was like I should call this Major something or another and I did. But at the end of the day it's an orange, pineapple, banana, and yogurt smoothie and here is how I made it, it's super easy.

Orange Major

serves 2 
1-2 oranges
1/4 pineapple
1/2 banana
50g vanilla yogurt

Juice the orange and pineapple and then blend with the banana and yogurt. If you like it cold add a few ice cubes!


It's perfectly orangey with just the right amount of pineapple and banana! This would also make great ice lollies. Pour them in ice lolly moulds and freeze! Yum!

Banana and Walnut Muffins


No one ever eats a whole bunch of bananas. That's why I generally only buy 3 at a time, one for me and one each for my little people. I could continue down the path of going on about how these muffins are a great way to use up old bananas, but to be honest I bought discounted already brown bananas just so I could make these muffins! 

Actually I had a bag of walnuts in my cupboard - so this time it wasn't the bananas at all! Except for the muffins. The muffins are about the bananas. 


Banana and Walnut Muffins

3-4 ripe bananas, smashed
75g melted butter
190g sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking powder
pinch of salt
200g flour
100g walnuts, chopped up

Heat the oven 180C. Mix the smashed bananas and butter together. Mix in sugar, egg and vanilla. Sprinkle in baking powder and salt and mix. Slowly add flour, blending after each addition. Fold in the walnuts and scoop the batter into the muffin pan, lined. Bake 18-25 minutes. 


These muffins are super easy to make! They actually don't take all that long in the oven and can easily be made upon waking up on one lazy weekend morning! 

Peanut Butter and Banana Milkshake


So, my good friend loves milkshakes. We talked forever about making one of those popular monster milkshakes ... you know the ones with the cups covered in chocolate and sprinkles and has cookies or doughnuts sticking out the top? We were totally pumped for it and we were like yay let's definitely do it! 

However, in the end it looked like a lot of effort for a milkshake. We weren't in the mood for all the faff and to be honest all the sugar. So, we made just what we wanted a simple peanut butter and banana milkshake. 

For this milkshake I literally blended some peanut butter, a banana, vanilla ice cream, and a dash or so of milk. Topped it with whipped cream and some dry roasted peanuts. Dry roasted because that is what was in the cupboard! I couldn't tell you how much I used of each ingredient and let's face it for a milkshake do you need to know? 

I believe you can use as much of or as little of each that you want and once it's blended it will still taste great!

Baking Lately - the adventures and happenings at United Cakedom


I wouldn't say I loved my job at Sainsbury's, as an online shopper, but I didn't hate it either. I loved being a witness to the sun rising and to scenes like the one above. I loved having my whole day ahead of me, but most of all I loved my co-workers. It was a comfortable environment and we were a great team of people. The only thing that made me want to change my job is that I was tired of dragging myself out of bed at 3:30am for a 4pm start. Picture below was taken on my last day and you can see how tired I am. 


I have found another part time job that suits my lifestyle better. It's just another change in a year of changes. I am looking forward to a new challenge, but sad about leaving behind two years of essentially some really great friendships. There are a handful of people I will be keeping in touch with, and the rest well let's just say thank goodness for Facebook!

One of things I did before I left is bake this Coffee and Walnut Cake for a charity bake sale going to BIBS, the local charity that our branch is currently supporting. Recipe can be found in Nigella's Kitchen on online here! 


I was told it was big hit and I got pictures of people eating it and the empty plate! The bake sale it's self was a big hit and it raised money for a great cause! BIBS (Babies in Buscot Support) is a registered charity that supports babies and their families in the special care baby unit (Buscot Ward) at the Royal Berkshire Hospital in Reading. 

This cake is one of many things I have baked lately, but haven't shared with you all! A lot of what I have been baking is stuff I not only have baked before, but also blogged. Here are a few of the things I've been Baking Lately




Banana Bread 
(I haven't actually blogged this, but the recipe comes from the hummingbird bakery cookbook.) 



So, that's a quick update on what I've been up to lately! I am still baking, but not as frequently nor as experimental as I used to be. I have also been a terrible baking supporter and have missed most of the Great British Bake Off this year. Think I will spend the rest of my Sunday trying to catch up with it as it is the semi-finals this week! 

It is my hope that once I've settled into my new job and I get a new routine set I will have more time to not only bake, but blog and get back into the blogging world! I have missed it as I have been dealing with real life stuff. 

I was all ready to get my Jamberry business off the ground and running and I've literally done nothing in regards to running it as a business, but I am still buying and using them! My latest manicure is called Ribbon Dance and I'm very pleased with it!

Tropical Muesli Muffins


With the weather changing I thought I'd brighten up my favourite muffins recipe with a tropical twist. I used coconut oil in place of the normal sunflower oil and added some desiccated coconut instead of sultanas. Then smooshed up a banana for extra oomph! And it wasn't just any old muesli it was a tropical muesli. One made by Dorset Cereals Simply Fruity Muesli - it has pineapple, papaya, and sultanas.

Normally I wouldn't mention a brand name. Gone are the days when bloggers can just say they like something without someone thinking that they were paid to mention it. So, normally I wouldn't mention the brand I used and keep it neutral; as I did in the ingredients list. I broke my norm this time because I really do value and enjoy the Dorset Cereals product. They have great flavor combinations that work great in these muffins.


Therefore I should say that they have in no way shape or form endorsed this post. Nor given me the product to "review." In fact they are probably not even aware that I am doing so! Unless one of you tells them.

These muffins are good and will make the whole kitchen smell like a tropical island. That might not be 100% accurate as you won't smell the ocean or other outdoor smells - just tropical fruit smells! Like coconut. Mostly coconut.

I suggest eating these by cutting them in half, while still warm, and gently spread a thin layer of butter on each side. With that I give you the recipe ....


Tropical Muesli Muffins

50g self-raising flour
75g wholemeal flour
2 tsp baking powder
100g, tropical muesli, plus extra to top the muffins with
50g desiccated coconut
75g light muscovado sugar
100ml coconut oil
1 egg
150ml milk
1 small ripe banana, smooshed

Heat the oven to 200C and line the cupcake/muffin tin with 9 paper liners.
Sift both of the flours into a mixing bowl and mix in the baking powder, muesli, coconut, and sugar.
In a jug mix the oil, egg, milk, and smooshed banana.
Pour the wet into the dry ingredients and gently mix until just combined.
Divide into the paper cases and sprinkle with extra muesli.
Bake for 15 minutes. Serve immediately with butter!

Chocolate Coconut Upside Down Banana Cake

Chocolate. Coconut. Upside. Down. Banana. Cake. That’s a mouth full to say, but I call it as it is when it comes to cake. In fact I call a lot of things as they are … in my head. This thing called tact keeps me from just saying whatever I am thinking at the moment.

Only children and old people get away with saying whatever they want. Luckily with cake nothing holds me back. If it’s good I shout it from the roof tops. If it’s not good aka bad then you will hear about that too. Mediocre cakes don’t even get mentioned! It’s the thing about being in the middle most of the time you get ignored. I would know I am a middle child.

What I’m getting at is that I am going to tell you straight how it is with this Chocolate Coconut Upside Down Banana cake. No messing about here.

This cake is deliciously interesting.

First you have the super soft cake made with coconut oil that becomes more moist with the caramel topping that soaks into it. Plus nicely baked banana slices to make you feel a little less guilty about the super rich cake.

Recently VitaCoco set me a sample of their coconut oil to try and after a few trial and errors this cake was made and I was pleasantly pleased with it.

Going along the lines of telling someone what is what, I can say that you should make this cake and if you don't you're a bit of a dumb dumb.


Chocolate Coconut Upside Down Banana Cake

110g dark chocolate
240ml boiling water, measure after boiling
225g sugar
195g plain flour
1/2 tsp salt
3/4 tsp bicarbonate of soda
225g light brown sugar
120ml coconut oil
110g sour cream
2 medium eggs, room temp
1 tsp vanilla extract

Heat the oven to 180C.
Place the chocolate, broken up, in a large bowl and pour the boiling water over so that the chocolate is completely covered and leave to the side. Gently whisk the sugar, flour, salt, and bicarb together and leave to the side.
Weigh out 250g of the coconut oil and gently heat to melt it down (250g is approximately 250ml) leave it to cool slightly.
Go back to the chocolate and water and whisk until smooth. Then add the brown sugar -whisk, coconut oil - whisk, sour cream - whisk, eggs one at a time whisking after each one. Last add the vanilla and whisk until combined.
Then add 1/3 of the flour mixture to the chocolate mixture mixing until just combined - repeat two more times until it’s all mixed together!


Upside-Down Bananas 

1 large or 2 medium or 3 small, bananas - sliced
75g butter
100g brown sugar
50g desiccated coconut or flakes

In an 8 inch or 9 inch deep cake tin put the butter and brown sugar at the bottom of the tin and leave in the heated oven to melt. Once melted give a little stir and add the sliced bananas to the bottom in any pattern you like! Sprinkle the coconut (add more or less if you like) over the bananas before very gently pour the cake batter on top. Bake for 45-60 minutes, depending on the size of the cake tin. If it’s not completely baked bake longer with five minute intervals and cover with tin foil if you are worried about the top/bottom being burnt. Once it’s baked gently put a knife around the edges to release it from the tin and place a plate over the cake tin and tip it upside down.

Eat as soon as it’s cool enough to eat. The caramel sauce will soak in and make the cake very moist (I hate that word, but it’s the only one to describe it) and make it look slightly under baked. Delicious!

Love Your Freezer Part 1: Fruit {smoothies & muffins}

This post is the first in two posts where I will be sharing the love for my freezer. Starting with fruit! As a baker fruit is a pretty obvious thing to keep in my fridge, because frozen fruits make great crumbles, cobblers, and pies! 

Frozen fruit (and vegetables) are almost better then fresh. The fruit is frozen almost immediately after it’s picked and by doing that seals in the freshness. An added bonus with frozen fruit is that 9 times out of 10 there is no need to defrost before using them, so it's as simple as throwing them into whatever it is that is being baked and/or cooked!


The most obvious way to use frozen fruit is in smoothies! Smoothies are the best way to make the most out of any frozen fruit. Since the fruit is frozen ice isn't necessary to add ice, which just ends up watering it down. Sainsbury’s have a strawberry banana smoothie pack that make smoothie making a breeze. My two girls love it when I whip this up for them!

Strawberry Banana Smoothies:
½ pkg (eyeball it) of Sainsbury’s Strawberry Banana Smoothie frozen pack
300ml vanilla yogurt
300ml apple juice

Blend all the ingredients together. Adjust the yogurt or apple juice according to constancy.

Any frozen fruit makes a good smoothie, I found the trick is using juice to add flavor and texture. It helps keep the smoothie from being too thick. Apple juice pairs well with strawberries, but play around to find your favorite combination. Also if you juice your own fruit it is even better for you, no hidden sugars.


The one frozen fruit I constantly have to restock is blueberries. That is because they are the best fruit/berry to use in pancakes, smoothies, and muffins. This is my fail safe recipe for Blueberry Muffins; the only thing I did different this time was sprinkle some vanilla sugar on top. It gave these muffins a darker colored top, but it was worth it. 


Feel free to substitute with frozen raspberries, blackberries, cranberries or even cherries in place of the blueberries!

Fair Trade Banana, Chocolate, and Walnut Cookies

Happy World Fair Trade Day!!

Fair Trade is something we should all support. When you work hard you expect to be rewarded fairly, right?

It’s in all of us to expect fairness, especially when it comes to the work we do. Recently I was shown this video of a monkey who wasn't rewarded the same as another monkey. 

They completed the exact same task and the monkey who was rewarded, what the monkey considered a lesser reward, was angry. The monkey then threw the “reward” at the giver.

The monkey was very cute and it did receive a quiet laugh from me at the behavior, because who hasn't wanted to throw things when something seems unfair. However, it was actually pretty disturbing to me.

A person who does the exact same job as another should get the exact same reward. Therefore I always buy Fair Trade when it’s available in support of those who work hard for a living.

In support of World Fair Trade Day I made Banana, Chocolate, & Walnut Cookies. They are very soft and more cake like. These would actually make a great Whoopie Pie; just add more chocolate and a cream middle! Yum!


Banana, Chocolate, and Walnut Cookies

80g unsalted butter, softened
100g Billington’s demerara sugar
1 medium egg
3 small Fair Trade bananas
½ tsp vanilla extract
175g plain flour
1 tsp baking powder
¼ tsp salt
1/8 tsp bicarb of soda 
85g –100g Fair Trade chocolate, broken up
70g of walnuts, chopped

Preheat the oven to 180C/350F. Line 2 baking sheets with grease proof paper.

Beat the butter and sugar together with a hand held mixer until combined. Add the egg,  the bananas, and the vanilla beat until the bananas are chopped up, but not completely mushed.

Add the flour, baking powder, salt, and bicarb and mix until just combined then fold in the broken chocolate and walnuts.

Drop a tablespoon of cookie dough unto the baking sheets leaving space in between to spread. Bake for 15-20 minutes or until the edges just start to brown.
