Baking with Isaiah! Chocolate Dipped Key Lime Pie on a Stick

Here in Minnesota there has been too much snow and it has been too cold for too long, so I decided to bring back some memories of warm times.

When I was 7 I spent the summer with my dad it Key West Florida. With the sandy beaches and calm waters this is the perfect place to remember when it is too cold.

The best dessert I had when I visited Key West was key lime pie. Once I had chocolate dipped key lime pie I loved it.

Adding chocolate makes it 10 times better. The first time I tried chocolate dipped key lime pie on a stick is when we stopped along the way to Key West at a gas station that sold it.

Ever since that I have been waiting for an excuse to make chocolate dipped key lime pie on a stick. ~ Isaiah

Chocolate dipped key lime pie on a stick

Crust:
1 ½ cups graham crackers or crumbs
1/3  cup sugar
6 Tbsp butter, melted
½ tsp ground cinnamon

Filling:
1(14oz) can sweetened condensed milk
3 egg yolks
½ cup KEY lime juice
 ¾ cup sour cream
2 Tbsp KEY lime juice
3 Tbsp sugar
9-14 Popsicle sticks

The first thing you do is crush your graham crackers. You can also use the pre-crushed graham cracker crumbs. I used my food processor to crush my graham crackers but you don’t have to. You should get the crumbs fairly fine.

Now in a large bowl combine graham cracker crumbs, sugar, cinnamon, and butter.

Next with the back of the measuring cup or you fingers gently press the crust into the pie pan and bake at 375F degrees for 7 min.

Now mix together sweetened condensed milk, egg yolks, and key lime juice. Pour filling in to pie crust and chill in fridge for 10 min.

In a smaller bowl mix together sour cream, key lime juice, and sugar.

Pour and spread the second mixture over the first mixture and bake at 350F for 30 min. Then let cool and freeze until rock hard. (This is very important.)

Cut small slits every 2-3 inches and insert the Popsicle sticks in them. Place back in the freezer.

Cut the pie into slices and spoon melted chocolate on then then flip over and repeat. Make sure the chocolate goes over the sides and covers to whole thing, let chocolate harden.

 Enjoy!

No Bake S'more Bars Green Bay Packer style!! {weekend baking with Janet}

No Bake S’mores Bars
·1/2 cup heavy whipping cream
·1 (11.5-oz) pkg. milk chocolate chips (or 1 3/4 cups)
·4 cups miniature marshmallows - green and yellow
·1/2 of a 12.5 oz pkg of Keebler Deluxe Grahams, broken into bite-size pieces

Line a 9-inch-square baking pan with foil.
In a saucepan, heat the cream over medium just until bubbles appear around edge of the pan. This only takes a minute or two.
Remove from heat and mix in the milk chocolate chips until smooth. Allow to cool, stirring occasionally. This should only take about 5 minutes.  You just want it cool to the touch because you don’t want it to melt the marshmallows.
Add the marshmallows to the chocolate mixture and stir gently.  You just want the marshmallows to get coated with the chocolate to coat. Then gently stir in graham cracker pieces until combined.
Pour the mixture into your foil lined pan and gently press down to fill the pan.  Be sure to scrape out every last drop!
Refrigerate for 2 hours or until firm. Remove from pan using the foil and cut into bars with a knife that has been sprayed with non-stick cooking spray. Makes 9-12 bars.

Note from Lisa: Look what I found!! UK Packer Backers!! (link not available 31.1.2016) Yay!!! Originally from Wisconsin our family loves the Packers!! I wish I could catch more of there games on here in the UK, but the timing is usually off!! Janet found the recipe for these here and just substituted yellow and green marshmallows for the white!! You can change the colors for your favorite team!!

Goodbye Men, Hello Dolly Squares!!

Not everyone is a fan of Valentine's Day. I like it because how can you, no matter if you are in or out of a relationship, hate a day celebrating love? In the book The Happy Baker: A Girls Guide to Emotional Baking the author Erin Bolger aka Happy Baker has been through all sorts of relationships and shares her stories with us in the book.

For this recipe she explains is for the hard times during her dating life that she thought she'd give up on guys and maybe start dating girls. It's all tongue in cheek, but I thought it was funny and these looked very yummy! All her recipes have fun titles that are a play on different stages and events that have to do with dating and relationships! If you have given up on love or are single this Valentine's Day you should not only make these, but share them the constant people in your life!! Family and/or friends usually last longer then some guy!

Valentine's Day shouldn't just be a lover's holiday, but where you show all the loved ones around you how you feel!! Mr Knightly and me don't really celebrate the holiday, but we enjoy showering our girls with attention and treats!

Crumb base: 2 cups graham crackers or digestives
Mix with a 1/2 cup of melted butter and press into your tray, 9x13 or 9x9 is what I used.

Add a cup of chocolate chips, shredded coconut (sweetened), and walnuts (about 100g)
Sprinkle them over the top!

Then pour 10oz (283g) of condensed milk over the top.
No need to stir or mix. Bake at 350F (175C) for 25 minutes.
You may want to preheat the oven!! :0)

The finished product!!
You could all them something else when handing them out!
Leave a comment what you would call them!
Hope everyone has a great day no matter your status!!
