Top 5 Vegan Recipes and Products {veganuary - five on Friday}

Veganuary may be over, but there are a few recipes and products I have added to my weekly shop or recipes I have added to my repertoire also one place I will visit again for their vegan menu.

Not in any particular order:



1. Falafels & Hummus wraps: I was making this recipe for years before I decided to try being vegan and it is still a go to lunch option. Falafels with hummus and spinach, shredded carrots, and either mint sauce or sweet chilli depending on the falafels.



2. Vegan burger from Honest Burgers - are made with Beyond Burger patties, they are the first restaurant in the UK to have these vegan burgers and let me tell you they are good!! I know it might be a bit weird to go to a burger place to get a vegan burger, but the rosemary salted chips are the best so it's always a win-win!



3. Banana bread recipe from bosh! - I have written a separate post for this so check it out here!

4. Violife original flavour block: vegan cheese - Cheese was my biggest fear,  I was afraid how it would taste and worried about the texture . Cheese how can vegan cheese hold up against regular cheese? But this one did and I am still using it for recipes and sandwiches.



5. tofu with spicy peanut sauce - this recipe I actually made in February but it was so good even my children liked this one and both ate it right up! Best part is that it goes in the slow cooker and can be left to it's own devices as you sort the rest of your life out.

recipe:
675g extra firm tofu
2 tbsp veggie oil
85g smooth peanut butter
3 tbsp low sodium soy sauce
3 tbsp rice vinegar
dash of lime juice
2 tbsp light brown sugar
2 tsp toasted sesame oil
2 garlic cloves, chopped
1 tbsp fresh ginger, choppped
1-2 red chillis, depending how hot you want it
350g baby spinach
chopped fresh coriander
brown rice to serve

Cut the tofu into thin squares or rectangles or whatever shapes you want and pat dry to remove any excess moisture before frying in a pan over a medium-high heat flipping until browned on both sides.
While the tofu is doing its thing mix everything except the spinach and coriander in the slow cooker and when the tofu is ready mix it all together and leave on low from 2-4 hours depending on your slow cooker. 15 minutes before serving add the spinach and cook the rice, if using 10 minute rice, and serve with rice and coriander as a garnish.

*note I only used one chilli as my kids don't like it too spicy, but if you like it spicy use another one!
**note two I chop up the coriander stalks and mix them in with the sauce
There were so many other things I tried and tested in my month of being vegan a few honourable mentions are the Goodfella's Vegan Pizza found in the frozen section and also found in the frozen section Ben and Jerry's vegan ice cream and last but not least the Heck vegan sausages.

Being vegan was definitely an experience and it has taught me a lot and as already stated changed a lot in how I do my food shopping and cook!


Vegan Chocolate Banana Bread from Bosh! {recipe review}

The best part of being vegan was this banana bread. I am just sayin'.


It's not the first time I have baked vegan, but it was always with varying results this loaf turned out great and I ate it for days and now make it whenever I have any old bananas lurking around.

The recipe is really simple and easy to make. It's literally just throw everything into a bowl and mix it together and then throw it in the tin and bake! Finding a recipe as simple as this, but tastes just as great is always a winner and the added bonus as that no animals were harmed in the making of this baked good!

If you are looking for a great baking vegan recipe to test the waters I recommend starting with this one!


Banana Bread

250g plain flour
75g light brown sugar
75g white sugar
1½ tbsp cocoa powder
½ tsp bicarbonate of soda
½ tsp salt
½ tsp ground allspice
110g dairy-free butter
3 ripe bananas
60ml almond milk
2 tbsp maple syrup
1 tsp apple cider vinegar
1 tsp vanilla extract
60g dark chocolate
50g pecans/walnuts

Preheat oven to 170C fan (190C/gas 5) and line a 1kg loaf tin with parchment paper.

Pour all the ingredients except the dark chocolate and pecans into a food processor or free standing mixer and beat them to a thick mixture. Scrape any excess mixture back into the bowl.
Break the dark chocolate and pecans or walnuts into small pieces and tip them into the bowl. Fold until just combined.
Pour the mixture into the lined loaf tin and put it in the oven.
Bake for 60-65 minutes, or until a skewer inserted at the middle of the loaf comes out clean. Take the tin out of the oven and leave the bread to cool to room temperature. Remove the loaf from the tin and cut it into slices to serve.




Banana, Pecan & Chocolate Muffins {Soulful Baker by Julie Jones}


Muffins don't really get enough credit in the baking world. They are versatile and can carry pretty much any flavor combination you throw at it.

I have made many of banana muffins in my days, but I never added pecans and chocolate to them, nor have I ever drizzled them with maple syrup....


There were so many recipes in Soulful Baker that I want to try out, but with the kids back to school and a million other life things taking priority I stuck to a simple yet delicious bake!


Banana, Pecan & Chocolate Muffins

80g unsalted butter
300g self-rising flour
1/2 tsp baking powder
100g golden caster sugar
220ml whole milk
1 medium egg
1 tbsp maple syrup, extra to drizzle
50g dark or milk chocolate, chopped or chips
50g pecans, toasted and chopped
100g mushed bananas

Preheat the oven 180C/200C. Line a muffin tin with 8 muffin liners.
Melt the butter in a pan and leave to cool. Place pecans in the oven to toast them, keep an eye as nuts are easy to burn, if you haven't already. Sieve together the flour and baking powder, then re-sift into the bowl of a free-standing mixer. Add the sugar.
In a separate jug/bowl whisk the milk and egg together, then pour onto the flour and sugar mixture. Mix on a medium speed until just combined. Add the cooled melted butter and maple syrup, chopped chocolate, pecans, and the mashed banana. Give it a quick mix until it's just combined.
Bake for about 30 minutes in the pre-heated oven. Use the skewer test to check if they are done and leave to cool a few minutes before eating and drizzle the maple syrup over the top!


Muffins turned out perfectly and were delicious with just the right amount of dark chocolate and pecans. If this recipe isn't enough to convince you to give Soulful Baker a look go check out my review here!

Fairy Tale Baking by Ramla Khan (book review) & The Three Bears Caramel Porridge Flapjacks

As a self taught baker I have seen so many different baking books. It is how I taught myself to bake by reading book after book after book! I had two thoughts when I first glanced at this book, Fairy Tale Baking: first was “Bakes based on fairy tales, cool!” secondly I thought “I hope it’s not just cake decorating, I am not all that good with fondant.”

My first thought was correct and my second a fear that dissipated as soon as I started to read it. Not that we don’t see fondant in the book, it’s just not all fondant if you know what I mean.

Each fairy tale or classic tale picked by the author, Ramla Khan, has 4 different bakes or treats to accompany the chosen tale. Making it perfect for party planning. As she says in the introduction a few of the recipes could be adapted for other stories. All it takes is a bit of your creative thought!

The introduction gives the basic skills and techniques you will need for the recipes in the book and Ramla Khan gives us basic recipes for cake, cookies, and the different icings or frostings.  Each chapter is a tale and before we get to the tasty treats we get an expert or a shortened version of said fairy tale or classic story.

The Fairy Tales you’ll see in this book are:

Goldilocks and the Three Bears
Jack and the Beanstalk
Hansel and Gretel
Little Red Riding Hood
Snow White

For example for Sleeping Beauty she gives us recipes for a Sleeping Beauty in a Bed Cake, Spindle Churros, Bramble Tartlets with chocolate thorns, and Meringue Kisses. That’s just a teaser of the creative and gorgeous looking recipes in this book. Each recipe is accompanied by pictures of the finished product and where needed some of the techniques.

I was quite taken with Goldilocks and the Three Bears. There is a Bear Cake, Caramel Porridge Flapjack (recipe below), Chocolate Chair Cupcakes, and a Gingerbread Bed.

The flapjack are technically a no-bake recipe that is super easy and produces a sugary treat that is just right. My only niggle was that the recipe called for a 6inch or 15cm square cake tin. It’s not a size I have ever used. An 8 inch square was way too big and my circle 7 inch was just not the right size, but my 2 lb loaf tin was just right for the job!


Caramel Porridge Flapjack

115g unsalted butter
125g dark brown/muscovado sugar
3 tablespoons golden syrup
300g rolled oats

Line your 15cm/6in square baking tin or like me your 2 lb loaf tin or two 1 lb loaf tins with grease proof paper. 
Melt the butter, sugar, and golden syrup until the sugar has dissolved, it should be smooth and shouldn’t feel grainy. I would watch it closely as sugar can easily burn if it gets too hot, keep it on a low heat. Pour in the oats and stir to coat. Pour into prepared tin and smooth it out with a spatula. Leave to cool in the fridge while you make the Caramel Chocolate topping.

Caramel Topping

400g tin of dulce de leche or ready made caramel
200g white chocolate, broken up
150g icing sugar, sifted


Mix the caramel and chocolate together in a medium sized sauce pan over a low heat and stir until smooth and combined. Add the sifted icing sugar, if it’s not sifted it may cause clumps. Be sure to stir it in well before pouring it on top of the oaty flapjack base. It should smooth out pretty much on it’s own, but use a spatula or icing palette knife to make the top nice and smooth. 
Keep in the refrigerator for a minimum of 2-3 hours or over night before slicing into squares.


As these are so rich you could cut them into three different sizes one that’s bigger for Papa Bears, one that’s just a bit on the smaller side for the Mama Bear who’s sweet tooth isn’t that sweet, and one size that is just right for Baby Bears!

August Break Day 27 Favorite Recipe

It's hard to choose just one favorite recipe, but these chocolate chip cookies never fail me. It's a Nigella recipe from her book Kitchen. It can also be found here.






Bread & Butter Pudding {recipe review}

When it comes to baking I am one of two extremes. I love crazy flavor combinations, once I had pepper and caramel on top of vanilla ice cream. It was amazing!

Yet, I love simple classic food combinations too, like strawberries and cream. So, basically I am the most contradictory person I know. That about sums it up really.

Recently I was approached and asked if I would like to try a recipe from Sunrise Senior Living. It’s a company that provides assisted living for the elderly. With an aim to encourage independence, preserve dignity and enable freedom of choice for all their residents.

Of course I said I’d love to try the recipe for Bread & Butter Pudding! Desserts are my thing, clearly!

The recipe was clear and easy to follow and to top it off it tasted great! Especially with the suggested vanilla custard!

Simple ingredients, most of which can be found in any cupboard, and a clear instructions you can’t go wrong with this recipe! Anyone any age could make this Bread & Butter Pudding. 


I have never made Bread & Butter Pudding in layers like this before, which I thought was an easier way to make it really. Just butter the bread and layer it up!

Because of the size of my baking dish I only had two layers, I would have liked at least three. That was the only thing not stated in the recipe - what size of baking dish to use. I could have done another layer I suppose, but then I would have had to adjust the rest of the recipe as well. 

Overly all the pudding was a real hit with my family! It is a classic for a reason!

Apple & Cinnamon Crumble Muffins

I chopped up my pecans with a knife as I didn't see the point in using a food processor just for that. 

It's a perfect recipe to use up old fruit! I always seem to have a only apple sitting around. They were very good and didn't last long! ;0)

Apple & Cinnamon Crumble Muffins

adapted from 100 Magnificent Muffins & Scones by Felicity Barnum-Bobb

225g plain flour
75g golden caster sugar
2 tsp baking powder
1 tsp cinnamon
Pinch of salt
1 medium egg
150 ml semi skimmed milk
2 apples peeled cores and finely chopped
50ml sunflower oil
25g pecan nuts
50g light muscovado sugar

Preheat oven 190*C/375*F/ gas 5
Put the flour, caster sugar, baking powder, 1/2tsp cinnamon and salt in a bowl
Add the egg, milk, apple, and oil and stir for a few secs until just combined.
Spoon the mixture into paper muffin cases
Put the pecans into a processor and whiz to chop finely, add muscovado sugar and the remaining cinnamon. Sprinkle over each muffin.
Bake for 15-20 minutes until well risen and firm. Serve warm.
