Top 5 Vegan Recipes and Products {veganuary - five on Friday}

Veganuary may be over, but there are a few recipes and products I have added to my weekly shop or recipes I have added to my repertoire also one place I will visit again for their vegan menu.

Not in any particular order:



1. Falafels & Hummus wraps: I was making this recipe for years before I decided to try being vegan and it is still a go to lunch option. Falafels with hummus and spinach, shredded carrots, and either mint sauce or sweet chilli depending on the falafels.



2. Vegan burger from Honest Burgers - are made with Beyond Burger patties, they are the first restaurant in the UK to have these vegan burgers and let me tell you they are good!! I know it might be a bit weird to go to a burger place to get a vegan burger, but the rosemary salted chips are the best so it's always a win-win!



3. Banana bread recipe from bosh! - I have written a separate post for this so check it out here!

4. Violife original flavour block: vegan cheese - Cheese was my biggest fear,  I was afraid how it would taste and worried about the texture . Cheese how can vegan cheese hold up against regular cheese? But this one did and I am still using it for recipes and sandwiches.



5. tofu with spicy peanut sauce - this recipe I actually made in February but it was so good even my children liked this one and both ate it right up! Best part is that it goes in the slow cooker and can be left to it's own devices as you sort the rest of your life out.

recipe:
675g extra firm tofu
2 tbsp veggie oil
85g smooth peanut butter
3 tbsp low sodium soy sauce
3 tbsp rice vinegar
dash of lime juice
2 tbsp light brown sugar
2 tsp toasted sesame oil
2 garlic cloves, chopped
1 tbsp fresh ginger, choppped
1-2 red chillis, depending how hot you want it
350g baby spinach
chopped fresh coriander
brown rice to serve

Cut the tofu into thin squares or rectangles or whatever shapes you want and pat dry to remove any excess moisture before frying in a pan over a medium-high heat flipping until browned on both sides.
While the tofu is doing its thing mix everything except the spinach and coriander in the slow cooker and when the tofu is ready mix it all together and leave on low from 2-4 hours depending on your slow cooker. 15 minutes before serving add the spinach and cook the rice, if using 10 minute rice, and serve with rice and coriander as a garnish.

*note I only used one chilli as my kids don't like it too spicy, but if you like it spicy use another one!

There were so many other things I tried and tested in my month of being vegan a few honourable mentions are the Goodfella's Vegan Pizza found in the frozen section and also found in the frozen section Ben and Jerry's vegan ice cream and last but not least the Heck vegan sausages.

Being vegan was definitely an experience and it has taught me a lot and as already stated changed a lot in how I do my food shopping and cook!


Favorites Friday! - from kitchenware to makeup!

Between now and just before Christmas I have collected a few new things that I really love and I just want to share with you! I’m going to say from the start that none of the brands or stores that I am about to mention have anything to do with this post. Everything I’m about to share with you are things I bought because I wanted them!

I don't buy a lot of kitchen stuff these days because I have most of the stuff I need. It's the odd occasion I add stuff to my collection and here are a few of the random things I've recently added!


The cookie stamp that says "Eat Me" I picked up at Home Sense on clearance for £1.99! I couldn't say no and I have yet to use it! Perhaps this post will make me go make some cookies so I can at least  say I used it once! If you have never been to a Home Sense I have to recommend that you do! It's a sister store to TK Maxx therefore it's very similar the main difference being that it's all homeware! It's wear I bought 2 of my 3 Nordic Ware bundt pans for only £16.99! 

The Mummy & Me mugs I bought around Mother's Day from Sainsbury's. My youngest loves elephants and a good cup of tea so I couldn't resist getting these mugs as a matching set! 

The butter dish is from Lakeland's and was bought with a gift card from my father-in-law gave me for Christmas! It was a little bit more spendy then just a regular butter dish, but it's insulated and is suppose to keep butter at a spreadable consistence at all times. Which has been mostly true as the weather has started to warm up. However our kitchen is the coldest kitchen and in the winter the butter was cold because the dish was cold and therefore not very spreadable! 

I used to have so many and as I love to share my baked goods with friends and family most of them have gone "missing." I decided it was time to invest in a nice set of cake tins - these are called Hearts Cake Tins and I also got them from Lakeland's with my gift card! 


I have a confession I am a coffee drinker! What I live in England! I know, but I just prefer coffee. I used to drink a lot of of those Nescafe cappuccino and latte sachets until they started effecting my bowels. No the most pleasant thing to talk about on here, but I realised that something in the sachets were upsetting my stomach so I was on the look out for an instant coffee that suited me. I have been drinking this CafeDirect for about a month and I really like it! I sometimes add the vanilla syrup to make it a bit like a latte! 


These post cards are my absolute favorite - Gotta love Paperchase! Especially the Loch Ness Monster one! As long as you believe in yourself then nothing else matters! 


Everyone always tells me to shop at Primark and when I do go in I very rarely seem to find something, but my last stop in I came across these two t-shirt and I couldn't say no! At about £5 a shirt why not? 


When I was in teenage years I loved candles! It's only been recent I've started buy candles again. The top one is from Paperchase and smells like avocado and mint - I have yet to burn it so will have to get back to you on it. The other two smell great and burnt evenly across. If a candle doesn't burn evenly and it just goes down the middle it's not a good value candle. Candles should burn straight across and another way to ensure this is by allowing candles to burn for at least an hour at a time. Of course as always with candles do be careful - never leave it unattended and in reach of children or on ledges where pets may jump up on. 


Never in my whole life have I ever been into make-up and beauty type stuff, but I suppose things change!

At the top is what I recently bought from Kiko at the Oracle in there 5 items for £10 deal. It was hard to choose, but I went with a nail buffer block, white shiny nail polish, a nude lip gloss, a red lippy and complimenting red lip liner. Wasn't impressed with the nail polish, but love the nude lip gloss!

Speaking of lip glosses I added my two favorites at the moment! Vaseline (limited edition) and classic Carmax! Keeps my lips from chapping! 

Speaking of chapping I love love love Soap & Glory's Hand Food lotion for dry/chapped hands! I have used it for years now! I also included a new face wash from Soap & Glory that I like and have been using for about a month now.

I ran out of eye make up remover and decided to try one by Simple and I find it quite nice. It doesn't try out my eye lids and is fairly gentle on my skin.

Since I had my hair cut shorter it means it needs to be styled more! When these two products, Smoothly Does It - Frizz Free Cream and Mega Hold styling mousse have been my saviours most days!

And I almost forgot the Barry M foundation primer and concealer! There isn't a bad thing about them and would recommend them to those who need make up on a  budget.


These are from Barry M - the lip glosses called Cor Balmy! are just the right about of color and moisturiser and they come highly recommended! The Sunset nail polish is also from Barry M and I have to admit I am pretty impressed with these! If the instructions are followed two coats of the color topped with the Sunset curing polish they last absolute ages! 

That's it for my Favorites Friday! There is no way I could write one of these every week or month for that matter as it's taken me months to collect all these new things! I haven't been baking as much lately because life stuff has been taking priority. It's unfortunately not easy life stuff either. I do hope to bake this weekend and will be sharing with you next week!!

Five on Friday - 5 Shows I'm Currently Watching on Netflix

I am a bit late to the Netflix bandwagon! So, I have a load of series and movies I need to catch up on! Here are the five shows I've either just finished watching or in the middle of!


Shadowhunters - The Mortal Instruments 

I read all the books except the last one so I was curious about the show. I haven't seen the movie, it apparently flopped and if it's anything like this show I understand why! The show is actually not that good, but because I love the Shadowhunter world I'm stuck watching it!!


Fuller House

I watched most of the series in one sitting! I grew up watching Full House and I can't help, but love this. Yes it's a bit cheesy and all goody goody, but I can't help but think we need a bit more of that in the world.


The Ranch

As a huge fan of That 70's Show (see previous post) when I saw that Danny Masterson and Ashton Kutcher were to be reunited in this made for Netflix series I just had to watch. It's about a prodigal son returned to help out on the family ranch. A different kind of show and I hope there is a second season!


Mako Mermaids

My girls really wanted to watch this show and I was all "Ugh, it looks terrible." However, I spent one Saturday night watching the last four episodes of season 1 with the girls because we, me included, just had to know does Zac takeover Mako Island? Does the pod return? I have refrained from watching season 2 as I was sucked in once and didn't want to get sucked in again!


Him & Her

A series that really focuses on the characters and they are loveable and completely outrageous. I started watching this on TV, but never caught all of them and now they are all in one place! Steve and Becky live in a bedsit and most of the show takes place in that bedsit with their friends and family coming in and out bring drama and comedy with them! I can't wait to get through the seasons!!

Five on Friday: Five Reasons to Love Hawaii Five-O



It’s all my friend’s fault! Sometimes when the girls are in bed I sneak out to my friend and neighbour’s house for a chat and a cup of tea. Sometimes when things get bad it’s a bottle of wine or vodka with apple juice. Don’t judge it’s tough being a mom. 

The said friend watches Hawaii Five-O and when I stop over it’s usually always on. Then without knowing I found myself watching it in the afternoons when I have that random hour with nothing to do before the school run. With just an hour it’s pointless to start anything and by the then I have a load of laundry out on the line another in the wash, dinner prepped etc… I could read one of my many books still waiting to be read or write a blog post, but I have found myself watching Hawaii Five-O instead. 

Here are the main five reasons I keep going back to it. 



1. It’s set in Hawaii. 
    Hawaii is beautiful. Some of the landscape shots are breathtaking. I would love to live here one day!

2. Alex O'Loughlin as Det Steve McGarrett 
    He's a super smart ex-Navy Seal who is basically a cop ninja. Which makes him sort of cool.



3. Daniel Dae Kim as Chin Ho Kelly
    I loved loved loved him in Lost and I love him all over again in Hawaii Five-O

4. Entertainment
    It’s a bit corny at times and even a little far fetched, but it’s entertaining. When I watch TV, which isn’t often, it’s to be entertained. I am always up for a bit of crime drama! The characters are loveable too, you start to care about what happens to them.




5. Did I mention Alex O’Loughlin???

Five Ways to Keeping it Cool in a UK Heatwave.


Let’s face it the UK isn’t known for it’s weather, but it’s forever predictable. I know many who would disagree with me. For instance: You wake up look outside and it’s raining, by the time you get the bus it’s blue skies, by the time you get the office it’s sunny, then by lunch it’s raining again and then it’s nothing by grey skies until the sunsets and you get a gorgeous one as big sun rays shoot across the sky. 

This doesn’t scream consistency, however the process is consistent. In England you prepare for every type of weather as you step out of the house! At the moment we are experiencing the yearly heat wave. It comes about this time every year. Since I now live in a country that doesn’t believe in central air here is how I keep cool in a UK Heatwave.

1. Shopping.
Chilled and freezer isles are your friend. Take as long as you need picking out your dinner and stock up on all sorts of cool treats! 

2. Fans. 
If you ever take any advice from me do not wait for the predicted heatwave to go out a buy a fan. You will be shit-out-of-luck. I don’t know who gets all these fans because someone somewhere must have come to the store and bought them. But every year there is a fan shortage. If you are smart you will buy your fan in the middle of winter. You can never have enough fans. 


3. Iced Treats. 
Ice lollies/popsicles or ice cream are your friend during a UK heatwave. Make your own or buy them and eat them for breakfast, lunch, and dinner. We used our favourite soda, Cherry 7-UP, for the ice lollies pictured. Just added a few cocktail cherries and you have a great iced treat. Use this theory will work with any of your favorite soda's. Leave them out for a while so it cango flat if you don't want the bubbles.

4. Water. 
Water is not just for drinking! Water gun fights are fun and a great way to stay cool. If you want to be a real dick just put ice in yours to watch everyone freak out when you get them! Water balloons, sprinklers, paddling pools, anything that hoses you down! 

5. Statue. 
If all else fails find a cool place in the shade and sit as still as possible. Your body will eventually adjust to the temperature that’s outside. If you don’t have a shady place outside to chill in, find the darkest and coolest place in the house place a fan directly on you and don’t move. Might sound lazy, but it’s a great time to relax and mediate or read a good book!

Also just so you know I’m not one of these annoying people who always complains about it being either too hot or too cold. Especially the latter, as I love a good cold day! 


Tips: Do be sure to wear sunscreen and hats and sunglasses! Drink water to keep yourself hydrated and cool!  

Five WWII Books {Five on Friday}


Yesterday was World Book Night and as a giver for the fourth year I had a great time giving out books! I gave the majority to moms and dads on the school ground. They are the worst culprits for saying they have no time to read. Everyone I talked to say they would try there best to start reading despite their “busy” schedules.

I say “busy” because we are all busy. It’s all about our priorities and where I appreciate that reading a book isn't everyone’s first priority I do believe it is a past time that everyone should attempt whenever they can.

I have read all of these books! I laughed and cried and lived in another time in different ways with each of these books. I couldn't recommend them more!

Five Ways to Use Betty Crocker Box Mixes {five on Friday}


Recently I was sent a variety of Betty Crocker box mixes to use in my baking. Every time I make something with a box mix I am worried about those “only from scratch” bakers getting on my case. However, I do use a box mix from time to time and have written about it on United Cakedom several times before.

There are a couple of reasons why I, an avid baker, would choose a cake mix. First there is very little you can do to mess it up and therefore is a good choice when in a pinch. Secondly cakes made from box mixes always turn out fluffy and soft and taste good so make great bases for special toppings or fillings.

Besides all that there are other ways to use cake, brownie, or cookie mixes and here are my five favorite ways: 


Bundt Cakes:

Using a stylish baking tin is always a way to dress up you cake mix. To Make: Follow the instructions on the box and add a 150g or a ½ cup of peanut butter to the batter. Make sure that the bundt is properly greased and floured before baking. Bake time will be a little longer then the time on the box, but it depends on shape and your oven. So, set the timer for the suggested time. Check the cake and if it’s not cooked add another 10 minutes, if it’s still not cooked add another five and continue adding five until it’s completely done. Use the skewer test to be sure. Leave to cool in the bundt pan for at least 10 minutes before gently tapping it out. Then glaze it! For a Peanut Butter Glaze (pictured): Whisk 250g/1 ½ cups icing sugar, 60ml/ ¼ cup milk, 75g/ ¼ cup peanut butter, and  ½ tsp vanilla extract together until combined. Pour over the top of the cake. Sprinkle 1 or 2 squares of dark chocolate very finely chopped over the top.


Cupcakes:

This is one of those obvious reasons, but cupcakes are always a crowd pleaser and there is so much to make cupcakes fancy or fun! I made these on my recent visit to my parent’s house in America. I used a Betty Crocker Red Velvet Cake Mix to make cupcakes and stuffed a limited edition Red Velvet Oreos in the middle before topping with a Cookies and Cream Frosting. To Make: make the cake batter according to box instructions. Fill the bottom of each cupcake case with a tablespoon of batter, then place an Oreo on top of the batter in each case, top each Oreo with the rest of the batter (about 3-4 tablespoons). Crush up any leftover Oreos and mix in the frosting for a delicious cookies and cream frosting! note: Since these Oreo’s don’t exist here in the UK feel free to use regular Oreos in any flavor cake!


Red Velvet Brownies:

These make a more cake like brownie, but are chewier which is how I like them! To Make: Heat the oven to 180C/350F; line a square tin with grease proof paper. Mix 1 box of red velvet cake mix; 60ml/ ¼ cup vegetable oil (or sunflower); 75ml/ 1/3 cup water; 1 egg together until combined. Add 100g white chocolate chunks and pour into the prepared tin. Bake in the preheated oven for 30 minutes. Once cool cover with Betty Crocker’s Vanilla Icing and Rainbow Sprinkle frosting.
  

Cake Batter Cookies:

Sally’s Baking Addiction blog’s most popular post is for her Cake Batter Sprinkle Cookies. I adjusted her recipe to suit a UK market. To Make: Sift 1 (450g) Betty Crocker Classic Vanilla Cake Mix and 1 tsp baking powder into a bowl. In a separate bowl beat 2 eggs, 75ml/1/3 cup sunflower oil, and ½ tsp vanilla extract. Add the wet mixture to the dry mixture and stir until combined. Heat the oven to 180C/350F and line the baking sheet with greaseproof paper. Form one-inch balls with the cookie dough and place on the baking sheet leaving space between each dough ball. Place a few chocolate chunks in the cookie dough. Bake for 9 minutes. Don’t let the cookies go brown, take them out and let them cool on the baking sheet for a few minutes before moving to a cooling rack. They will look pale and under baked, but they will harden while cooling. note: want red velvet cookies? Use Betty Crocker’s Red Velvet Cake Mix and white chocolate chips!



Brownie Bites:

Brownies are already smooshy so they are a lot easier to make then cake pops (another great use for cake mix). To Make: Make brownies according to the box instructions. Once they are cool enough to touch break some up and roll it into about a 1-2 inch ball. Cover in melted chocolate or candy melts. Decorate however you want! Five Reasons for Working Unsocial Hours

When my youngest started reception or kindergarten last September it was time for me to venture out into the working world again. When I decided to stay at home I left a job, not a career. So, I picked up another job that has me working 4am-8am 3 days a week.

Here are my reasons for loving my part-time unsocial hour job!

Co-Workers:
Most people gasp and exclaim they could never get up that early to go to work and I believe them. It takes a special type of person to work those crazy hours and by special I mean good-humored. Which are what all my co-workers are and I love them all for it.

Family Life:
Even though I am ready for the working world again, I still have a young family. My girls will always come first. For the same reasons I stayed at home with them is the same reasons I choose to have a job that allows me to pick them up from school and have dinner with them and put them to bed.

My Time:
Since I finish work early from starting early I still have my whole day. I don’t nap because it would mess with my bedtime. The girls are at school and I am free to have coffee with friends or bake or read or what usually happens laundry!

People or Lack of:
Unsociable hours mean you only have co-workers to deal with. Not having to deal with the public so to speak is always a bonus in my book!

Stress Free:
I go in I do what I need to do and then I leave. It’s not a job that comes home with me or stresses me out. I might be a bit tired and if you ask my husband a little crabby by the end of my three days, but there is little to no stress involved. With all the other stresses of life, I am thankful my job isn't one of them.

One day I will find a way to make a career out of doing what I love. Supposing I ever find something I love enough to make a career out of it! I have so many things I enjoy to do, but sometimes I like the separation of a job and the things I like doing!

Five on Friday: My Five Favorite Baking Ingredients

As a blogger I start a lot of my posts out with I love love love this or that. Apparently that's annoying. There was a person on twitter saying so. Ever since then I try really hard not to gush about my favorite types or flavors of bakes too much or in that way. I try to be a bit more natural about it.

However I do have a handful of favorite baking ingredients. If I had to choose between these five things I would have to walk away as I couldn't decide I love all of them!!

Apples:

An apple a day keeps the doctor away! It counts if they are baked in pastry or cake or cookies!! 



Cinnamon: 

Works so well in bakes!! It's got a bit of heat and always makes me think of fall/winter! 



Peanut Butter:

Reminds me of my childhood and tastes great paired with chocolate or on it's own!! 



Coconut:

You either love it or you hate it!! 


Coffee: 

I not only love drinking coffee, but I love coffee flavored cakes, frosting, ice cream, and so on!

Five on Friday: 5 Things My Mother Taught Me

In the states Mother's Day isn't until May. However this Sunday is Mother's Day here in the UK and with all the Mother's Day cards and ad's telling us how to treat our mother's this Sunday I can't help but think of my mother so far away in the USA!

So, this Five on Friday I am sharing 5 things my mother taught me. Things that have helped shape me into the person I am today.


How to be a good friend: My mom has the biggest heart. She taught me that everyone needs a friend: someone who listens and gives them time. Putting someone else's needs before yours and helping them when they need it - no matter if it's just to listen or help them move house that's what being a good friend is all about!


Acceptance & Tolerance: she taught me to accept everyone for who they not only for the good in them, but also the bad. Because no one is perfect and we all make mistakes. People come from all sorts of backgrounds and even though we may not understand doesn't mean we shouldn't be nice to them. A smile is all it takes sometimes.


Choices - making my own: I have never been told I couldn't I do something. When I started looking at colleges I applied and was accepted at Washington University in Seattle. My mom sent my non-refundable deposit as I was going to go. Then when I thought about out of state tuition and how much I'd owe when I got out I changed my mind. When I moved to the UK I know she wasn't over the moon about it, but she never once told me or asked me not to go. She has always let me live my own life. She taught me to make my own decisions because she understands that it's my life.


Nothing is better then a good book: Growing up I saw my mom constantly with a book. Children see, children do. My sisters and I are all big readers. She taught me that reading is a great way to expand your mind without having to go anywhere. 


How to Love unconditionally: No one loves me like my mom does. It's not a love that can be replicated. I know that no matter what choices I make my mom will always be there for me. It's something that I hope to pass along to my girls, I hope they know that no matter what their future choices are I will always back them up.
