Pescan: A feel good cookbook by Abbie Cornish & Jacqueline King Schiller {cookbook review}

When the publishers wrote to me and asked if I would be interested in reviewing a copy of Pescan, I responded right away with a a yes of course! Having experienced a vegan lifestyle, but not being able to maintain it after the month, I have been looking for alternative ways to try and get back to a plant based diet.

The authors best friends and they share a love of food and wellness and from that came what they call "pescan." Which is essentially dairy-free, plant-based, and gluten free but with options of high-protein seafood and eggs incorporated.

The book gives us each of the author's story anyhow they got to this book. They also give us a guide on how to feel good in the kitchen, the pescan lifestyle, and stocking your kitchen with all the good things.

Then the rest of the chapters get into the recipes. The first chapter covers the basics and batch cooking then it continues with breakfast, eggs, soups and salads, beans and grains, pizza and pasta, seafood, party food, and last but never least dessert. The book ends with a section called gatherings which includes menu plans for different events and gatherings.

Recipes I have already tagged to try out:

Everyday Magic Beans
Blended Vanilla Iced Mocha
PB&J Overnight Oats
Curried Tofu Scramble
Banana Pancakes with Cardamom Spiced Berries
Quinn's Breakfast Cookies
Lobster, Corn, and Caramelized Leek Frittata
Creamy Truffle Mushroom Soup
The Happy Hippy Quinoa Salad
California Dream Burgers
Lemon-Pea Risotto with Mint
Fiesta Veggie Rice
Pesto Zucchini (courgette) Noodles with Cannellini Beans and Sun-Dried Tomatoes
Creamy Mushroom Lasagna with Pesto
Italian-style Grilled Halibut
Spicy Buffalo Tofu Fingers with Avocado Ranch Dressing
High-Protein Black Bean Brownies

There are so many more recipes to choose from and not only that it has a wealth of information on how to cook basic things so you can play and make your meal time your own. And in my opinion that is the sign of a great cookbook.

This book offers something for everyone. It's great for people who want to avoid dairy or gluten, but it's not just for them. There are some fantastic ideas and flavor combinations and I really can't wait to try the recipes out!

*I was provided a copy of Pescan: A feel good cookbook by Abbie Cornish & Jacqueline King Schiller to review by the publisher, abrams&chronicle books, retails at £21.99 and available now on Amazon! All opinions are my own, I was not given any other compensation nor was I asked to give a positive review, please see my contact/policy page for more information.

Clean Cakes by Henrietta Inman {book review}

A few years ago baking was all the rage with The Great British Bake Off reigning as king on the BBC, but things are changing as we are more aware, thanks to Jamie Oliver about the amount of sugar and other additives in our food.

Since I started baking at home it is the very rare occasion that I buy store bought cakes and treats, with the exceptions of my girls favorite biscuits here and there. When I bake at home I know exactly what is going into it and I do think it’s important that we start thinking about what it is we are putting into our bodies.

Henrietta Inman, author of Clean Cakes, felt similar when she started to question all the traditional sugary pastries and bakes she was trained to make. She then started her own business using her knowledge from being a pastry chef in many kitchens around London, but with a twist using nothing but natural ingredients. No refined sugar in this book.

This isn’t just a cookbook, but a text book of information on all sorts of alternative ingredients for the key baking ingredients: dairy, sugar, and gluten. Miss Inman teaches us how to stock our larders/shelfs full of all the ingredients we need to make any of her creations at any time.

So, now that we have the knowledge and ingredients we can start baking cakes, bread, cookies/bars, tarts and pies, raw desserts, and patisserie treats - mostly chocolate, including how to make your own chocolate.

After reading the book cover to cover I couldn’t help but bookmark a few recipes to try! It’s always good to try new things and here is a list of those bookmarked recipes:

  • Courgette, basil, lime and pistachio cake with avocado lime cream and raspberry jam (picture)
  • Baked banana, date, and pecan loaf with spiced caramel sauce (picture)

  • Dark chocolate dipped peanut butter and jelly dreams
  • Chai-spiced oatmeal, raisin, sultana, and currant cookies
  • Sour cherry and macadamia butterscotch blondies
  • Blueberry Galettes
  • Gooseberry and almond tart
  • Maple Baked Apple Pies
  • Tiramisu mousse
  • Chocolate, banana, and passionfruit pie with sticky toffee sauce (picture)

  • Pristine Black Forest parfait
  • Blueberry lemon mousse cake with scented geranium flowers (cake on cover)
  • Homemade chocolate
  • Dream coconut ice (picture)

Now all I need to do is stock up my cupboards! However, that doesn’t mean that I have given up on sugary, buttery, flour cakes and bakes for good. It means, for me, that there is alternative and I like living in a world where there is choice. Sometimes I will chose to make a cake with full fat milk, sugars, and plain flour and other times I will chose dairy, sugar, and gluten alternatives and when I do I will turn to this book.

It is truly a beautiful book. I have learned a lot, it really shows how much time and effort Miss Inman must have put into this book. I couldn’t recommend it more; especially to those with food intolerances.

The book is out today! Order your copy online or from your favorite retail seller!

note: I was sent a copy of clean cakes to review from the publishers Jacqui Small LLP; no other compensation was given. All opinions and views are my own. Please see my contact/policy page for further information. I have everything I need to make the blueberry galettes so, hopefully will be making and posting those soon!!

The Pastry Challenge November Round-Up {Pies and Tarts}

When I was at work the other day we were discussing holidays and this conversation came to be:

Co-worker: Are you already for Christmas?
Me: Getting there, have a few things to pick up. We don't really go to crazy with presents and stuff.
CW: That's because you get most of your presents for Thanksgiving.
Note it was stated as fact not a question.
Me: Ah? What?
Another co-worker stocking shelves staring at the first co-worker like she's grown horns right in front of him.
CW: Isn't that what Thanksgiving is all about?
Me: No. No, Thanksgiving is all about food and feeling thankful for what you have.
The other co-worker looks at me and shakes his head.
CW: Oh, I thought Thanksgiving was like Christmas?

Perception is everything. Thanksgiving isn't celebrated here, so most people can only assume and guess what it's like or what it is! It's all determined by media - either movies or TV or the internet. Although I'm not sure where she got the idea we exchange presents on Thanksgiving? It did give me a good laugh, bless her!

I bring this up because Thanksgiving is why I made this month's theme pies and tarts, tis the season and all that. I was not disappointed as yet again we had some great entries!!

There is something about the simplicity of a jam tart that makes it so elegant. The light pastry filled with the ruby colored jam is very appealing! It'd be hard to stop at just one! And these are gluten free!

National Picnic Week with Udi's Gluten-Free range!

It’s National Picnic Week and I think that everyone should have a picnic! When I say everyone I mean everyone! Even those with different food intolerances. My husband cannot have any form of citrus and it can be difficult; you’d be surprised by how many things use lemon or lime juice as a preservative.

It's also that time of year when people are starting to line up their favourite festival's! Throw some of these ideas below into a bag and you're all set to enjoy your day out!

So, when Udi asked me if I’d like to receive a box full of some of their new Gluten-Free products I said yes! I am always happy to spread the word of good products that are suitable for those who are looking for food alternatives! I know their pain.

They sent me: (pictured: left to right)
Soft & Delicious Blueberry and Chocolate Muffins
Flaky & Delicious Pastry Mix
Soft & Tasty Sundried Tomato Bagels
Soft & Delicious Multiseed Bread
Crispy & Delicious Bagel Chips

Everything you need to make a picnic great! As an American I would tend to eat the muffins for breakfast, but since I’ve lived in England muffins are more of a treat. Therefore you just throw them in your picnic basket and wah-la instant picnic treat! ….Actually you may want to place them gently on the top somewhere so they don’t get squished.

The pastry mix I honestly haven’t had an opportunity to try yet. I do intend to make something, most likely sweet and picnic friendly. I am very curious to see how it turns out and will update this post when I do make something!

I used the sundried tomato bagels in place of bread; it is a great way to add flavor to the same old same old lunch! Just toast the bagel before adding on your favourite condiment, cold meats, and cheese! Yum! These possible don’t suit picnics very well, because they are best after being toasted. However, if like us you have a picnic in your backyard/garden then it works. I am going to apologise for not having a photo of this! I was a bad food blogger and just ate them, but I have no regrets they were good!

Sandwiches are the ultimate picnic food. You need to have bread to have sandwiches and sandwiches to have picnics. A picnic without a sandwich is like rain on your wedding day, not ironic, but unfortunate. I like a good bit of Multiseeded Bread especially filled with pickle and cheese. There seems to be some debate on if pickles are gluten-free and some are and some aren’t so please check before eating!

The Bagel Chips are indeed crispy and delicious! I loved snacking on these and dipping and topping them with various things like cream cheese (not all brands are gluten-free), hummus (try Udi’s recipe), and pate! My little people and I devoured a whole box and tub of hummus for lunch one sunny afternoon. Super easy to add to any great picnic!

Be sure to check out the official Udi’s website for more information on their products! They also have a great section of recipes including one for a gluten-free hummus!

notes: In association with Udi’s, please see my contact/policy page above for more information. Please check with any branded or store bought ingredient to be sure it’s gluten-free. All brands are not created equal.

Update February 2017 - Udi's are no longer available in the UK, but can still be found in the USA!

Gluten & Dairy Free Blueberry Almond Crumble Muffins

When I was little I had a good dentist, who happened to live in our neighbor hood and on Halloween would give out toothbrushes and Trident sugar free gum. I didn’t realize how great he was until we moved states and I encountered a capable, but horrendous dentist.

Which is why I really appreciate our current dentist, he’s pretty cool and my girls love visiting him. They don’t see the dentist as something to fear and I thank him for that. I think it really does matter how you feel about going depending on who you’re going there to see.

If it were not for my friend who used to work with him, we’d still be with our old dentist who just wasn’t great with kids.

To make sure he knows he’s appreciated I occasionally bring him baked goods. The first time I brought a big plate of Rocky Road, however unbeknownst to me he cannot have gluten or dairy. So, he was unable to enjoy the Rocky Road due to all the chocolate and biscuits.

This time round, as our appointment was in the morning, I brought him these Blueberry Crumble Muffins. They were a bit heavier then regular muffins but they were good. The blueberry and almond flavors really go well together.

It will be six months before I get to ask him about them, but I really hope he’s enjoyed them. Wonder what I should bring him next?

The recipe was adapted from Ms Cupcake’s The Naughtiest Vegan Cakes in Town! It’s one of those books I highly recommend to any one who is after Vegan or dairy free cakes and bakes. Plus all of the recipes can be adapted like I did to this one to be gluten-free as well!

Blueberry Almond Crumble Muffins

crumble:

100g gluten free self-rising flour
50g demerara sugar
50g dairy-free margarine

Put all the ingredients into a bowl and mix together with your hands until it’s all crumbly.

blueberry almond muffin:

500g gluten free self-rising flour
60g ground almonds
1 tsp bicarbonate soda
1 tsp baking powder
250g golden caster sugar
500ml Oatly Oat Drink
320ml sunflower oil
2 tsp vanilla extract
½ tsp almond extract
100g whole blueberries

Heat the oven to 180C/350F and line a muffin tin with paper cases. I had enough batter for 18 muffins. In a big bowl mix the dry ingredients together. In another bowl mix the wet ingredients together. Then pour the wet mixture into the dry mixture and quickly fold together with a metal spoon until just combined. It will be a bit lumpy but that’s exactly how it should be, if it starts to fizz just bang the bowl on the counter a couple of times. Then fill the paper cases about ¾ full before dividing the blueberries between the cases and sprinkling with the crumble. Bake for 20-25 minutes. Cool in the tins for at least 10 minutes before placing on a cooling rack to finish cooling off. Then package up and give to really cool dentists who can’t have gluten or dairy.

notes: I used Dove’s Gluten-Free Self-Rising flour and Vitalite Dairy Free Margarine. I also used Oatly Oat Drink that was leftover from a previous post I did for them. Feel free to use a soya or rice milk. Be sure to check that your baking powder is gluten free. None of these brands are sponsoring this post, but thought I would mention it as I felt it would be helpful. All opinions are my own please see my contact/policy page for more information.

Udi's Gluten Free Chocolate Cupcakes

These are a batch of gluten free but oh so chocolaty cupcakes!

I made these with Udi’s Chocolate Flavour Cake Mix and topped them with Sugar and Crumbs gluten free Chocolate Milkshake natural flavored icing sugar.

I thought about putting “Frosting! A butt load of frosting!” (Vanellope von Schweetz) on these cupcakes, but I don’t always like that much frosting.

Sometimes you just want cake.

Plus I have this really cool Baker’s Dusting Wand that I have wanted to try out! It totally made me feel like a baking fairy! No lie.

Udi’s Cake Mixes are a great way for people with gluten sensitivities! Just because one cannot have gluten does not mean they should miss out on cake of any kind!

This is something I feel really strongly about.

These cupcakes have a very rich chocolate flavour and were a perfect accompaniment to my coffee.

Udi’s Chocolate Cupcakes:

1 box of Udi’s Gluten Free Rich & Delicious Chocolate Flavour Cake Mix
Plus the ingredients on the back of the box
1 tbsp of Sugar and Crumbs Milkshake flavoured Icing Sugar

Follow the baking instructions on the box for cupcakes. Then fill the magic dusting wand with icing sugar and dust away! Enjoy!

The back of the box also has some great suggestions on how to take these cupcakes from yum to yummy. Or something like that! So, if you or someone you love or at least like has gluten sensitivities then you should brighten up their day by bringing them some of these amazing cupcakes!!

I had way too much fun with that dusting wand! Now I will have to think of something else to use it on!

notes: Udi’s have a great range of Gluten-Free products they launched here in the UK earlier this year. Check out the first post I did for them here and here! Also check out my instagram as I try out some of their other products! All the products (cake mix, baker’s dusting wand, and flavoured icing sugar) were sent for my review please see my contact/policy page for more details.

What’s for Dinner? {Udi’s Gluten Free Ancient Grain Crisp(y) Chicken}

Recently I had an opportunity to try out a new range of gluten-free products.

Udi’s is already a well-known brand in the USA and want to make a splash here in the UK with their amazing gluten-free food.

I decided to use their Ancient Grain Crisps, which come in Aged Cheddar and Jalapeno Cheddar flavors, to make Dorito Chicken as it's commonly known.

Basically you can use any chips/crisps that you want as a coating to make your own chicken nuggets.

I used a mixture of both flavors, since they were for the little ones I didn't want them to be too hot with only the Jalapeno Cheddar flavor. They weren't too hot on their own really, but they did have a bite to them.

Both flavors of crisps were tasty and made a great coating on the chicken. Both my girls ate them up and asked for more!

Udi’s Gluten Free Ancient Grain Crisp(y) Chicken:
Serves 2-3

250g chicken fillets
150g (1 cup) Dove’s Farm Plain White Gluten Free flour
2 medium eggs, beaten
100g Ancient Grain Crisps, crushed use one or both of the flavors!
about 200ml oil, to shallow fry

Coat the chicken fillets in the flour before dipping into the beaten eggs, then coat with the crushed crisps. Heat up the oil in a shallow frying pan. Once it’s hot enough, lower the heat and fry the fillets for 3-5 minutes on each side. Depending on how hot your oil is and how big your fillets on will all contribute to how long they take to cook all the way through. I always check the last one I put in, if it’s cooked then the rest will be cooked too. No one wants to eat partially cooked chicken.

Serve with salad or rice and extra Ancient Grain Crisps of your choice!

notes: I was sent Udi’s products to review. Please see my contact/policy page for more information. Check out the review! For Udi’s full range check out their website!

Happiness in the form of Udi's Gluten Free Food

Udi’s, a gluten-free brand launching here in the UK, has the simple goal of creating the best gluten-free foods on the planet!

From what I've tried I have to say I don’t doubt they will achieve that goal! Considering they have already conquered the USA.

Their mission is to provide those who suffer with Coeliac diseases, gluten sensitivities, or those who just want to cut down on gluten in their diets for a healthier lifestyle tasty alternatives.

Alternatives that will bring smiles to their faces and happiness in their hearts.

There will be two kinds of reactions to that last sentence; those who understand completely and those who just don’t.

Good food of any kind warms the soul, am I right? And those who suffer from food sensitivities or allergies shouldn't have to miss out.

My friend’s boss is a Coeliac and he can’t have dairy. She asked me as a special surprise for his birthday to make him some cupcakes. I managed to whip some up and gave him “the best cupcakes he has ever had.” It also gave him something he usually had to miss out on, birthday (cup)cake!

What I did for my friend’s boss and what Udi’s is doing for others like him, who have problems with gluten, is the exact same thing. We're giving them a chance to enjoy food! The only difference is they are doing it on universal scale!

I was sent a hamper of the first products they are lunching here in the UK, they are already very successful across the pond in America. After trying out everything they sent I look forward to their success and range widening here in the UK.

My favorite was the Cinnamon Sugar Bagel Chips; they made a perfect morning snack. My two little ones ate up the Toaster Pastries, Chocolate Chip muffin, Toffee muffin, and bagels without noticing they were any different from their normal breakfast/snack foods. I tried all of them as well and was very pleased with them.

Check out this post to see how I used up the Ancient Grain Crisps. Which were both very good, if I do say so myself.

Look for them in a supermarket near you! Or you could always contact them on their website or any of their social media sites. I am sure they will be more then happy to help you locate their amazing products.

notes: I was sent a hamper to review, all opinions are my own, please see my contact/policy page above for more information. I am a complete sucker for good presentation and Udi’s has great presentation! Loved the box it was shipped in!

UPDATE FEBRUARY 2017 - Udi's no longer operate here in the UK!

No Fear Gluten-Free Birthday Cake!!

This cake is for all those who are gluten intolerant and have missed out on birthday cakes. But have no fear, this cake recipe will make sure you never have another birthday with out a delicious cake!

A friend of a friend was celebrating her daughters 21st and was after a gluten-free cake and my name came up! I was happy to do it, as it must be difficult to get a hold of a tasty gluten-free cake.

Not that I would know really. I have never looked for gluten-free cakes in the area. However I came across this recipe and I think it's pretty good. I was told the birthday girl was pleased and that they all agreed the cake was tasty!

I really enjoyed the challenge of this cake and would happily do it again. The cake layers were very dense, but the scrapes of the chocolate layers I tried were very moist and good. My 2 little ones at up all the scrapes and wanted more so I would say it was an over all success!

Here is how I made it! It looks and sounds a bit lengthy and difficult, but it really isn't. I finished it all in a few hours, no longer then most layer cakes. So, don't be afraid and give it a go!

Gluten-Free Birthday Cake
vanilla layers:

300g Dove’s gluten-free plain flour
1 tbsp of baking powder (check that it is gluten-free)
pinch of salt
140g unsalted butter, melted
200ml whole milk
150ml sunflower oil
350g caster sugar
4 medium eggs
2 tsp vanilla extract/paste

chocolate layers (half the recipe above)

150g Dove’s gluten-free plain flour
pinch of salt
½ tbsp baking powder, error on the side of more then less
70g unsalted butter, melted
100ml whole milk
75ml sunflower oil
175g caster sugar
2 medium eggs
*1 tbsp cocoa powder
*1 tbsp hot water

~ Instructions are the same for both sets of layers I will (*) where things are different. ~

Preheat oven at 180C/gas4 Grease and line 2 8in (20cm) round cake tins and one 8 in (20cm) square cake tin for the chocolate cake. Line them properly (I cheat a lot when lining cake tins) as the batter is very liquidy.
Sift the flour, baking powder, and salt. Mix the melted butter, milk and oil together. In a large bowl or in the bowl of a stand mixer whisk together the sugar, eggs, and vanilla. *For the chocolate layer mix the cocoa powder with the hot water to make a smooth paste. Then whisk together the sugar, eggs, and chocolate paste.
Add about 1/3 of the wet mixture to the sugar and egg mixture, then 1/3 of dry mixture and repeat until everything is used up. Pour the cake into the prepared cake tins. Bake for 40-50 minutes, until a skewer comes out clean. *I baked the chocolate layer for about 30-40 minutes as I put it in the over after the other two layers were already baking. Cool for 10 minutes in the tins, before turning out. Then place on a cooling rack, with the baking paper still on, until completely cool.

Vanilla Buttercream:

300g butter, at room temperature
525g icing sugar
2 tsp vanilla extract
2-3 tbsp of milk
very little red paste or use pink paste or which ever color you want

Beat the butter until smooth then add the icing sugar little by little until combined and mostly smooth. Add the vanilla extract and the milk, 1 tbsp at a time. You may only need 2 so just watch it. If it’s too smooth add a little more icing sugar. Beat in the color paste until it is evenly distributed.

to finish:

raspberry jam
sprinkles of choice
candles

Once the cake layers are cool remove the baking paper and lay on a cake board or plate. Spread 4 or so tablespoons of raspberry jam across the bottom layer. Place the other vanilla layer on top.
Using a 3 7/8 in or 98mm circle cutter cut out 2 rounds from your square chocolate cake. Spread about 1-2 tbsp of jam on one side of the chocolate circle and center it on top of the vanilla layers. Spread more jam on top of that before placing the last circle on top.
Gently spread a crumb layer on top of the cakes before laying a proper layer on the tops of both cakes.
Then using a piping bag and star nozzle pipe around the base of cake and work up. Repeat on the smaller cake. The last row of piped stars should sit around the top layer of cake.
Decorate however you want! Do double check that the sprinkles and decorations if not homemade are in fact gluten-free.

I bought decorations that weren't all gluten-free and not knowing the extent of the recipients allergies I gave her mom the decorations to use at their discretion. The picture at the top was sent to me after they decorated it and the picture below of the cake sliced open was also sent to me to share with all of you!

notes: I stated that I used Dove's plain gluten-free flour, because I am not sure if it matters or not. Do gluten-free flours vary? I am unsure so I wanted you to know exactly what I used. You could always add the quantities together, then divide into the 2 round cake pans, with what’s left add the chocolate paste. That would be way easier and save on time, but this is how I did it. I would still do it the way I did it because I’m a bit particular like that. If you wanted to reverse the flavors of the layers, I would use 3 tbsp of cocoa powder and hot water to make it extra chocolate-y. You could also make more buttercream and layer between the layers. Recipe adapted from Fussy Eaters recipe book by AnnabelKarmel; please email me or leave a comment with any questions on how to make this cake if I have not made it clear enough.
